2017 Cabernet Sauvignon Reserve

Our Cabernet Sauvignon Reserve 2017 is a testament to an exceptional growing season and our winemaking. Rediscover this varietal with this glowing, cool climate expression of a perennial favourite. 

Tasting Notes
Hints of wild cherries and blackberries create a brilliant ruby red colour with an explosive savoury and fruity spiced finish that will complement any occasion.

Vineyard Notes
2016 gave us exceptional conditions for the growing season. An early start to spring, above normal temperatures and dry conditions throughout the summer, with just enough precipitation to stave off concerns of drought. Much of the fruit from this vintage was destined to be crafted into Reserve wines. The harvest started early and was dry, allowing us to leave varieties, such as this Cabernet Sauvignon, to hang on the vines longer, and take in all the benefit of a longer growing season.   
 
Production Notes
 Nature rewarded our patience by granting the conditions for the grapes to mature longer on the vines. The growing season generally indicated we would have an exceptional vintage and, at harvest, the sugars present in our Cabernet Sauvignon confirmed our expectations. The grapes used for this reserve vintage were collected from two blocks. We Aged for two years in French oak resulting in a full bodied and robust wine. We allowed the wine to further mature in bottle for a year, before release.
 



Winemaker's Notes

Cabernet Sauvignon from the Niagara peninsula has earned its place amongst the better expressions of this varietal, across the many regions of the world where it is grown. What you will find, in our region, is an expression reminiscent of an old world Cabernet.

Naturally, the Niagara region is a cool climate and, as such, the wines we make here cannot be conflated with, say a California Cabernet Sauvignon, as simply new world wines. With every varietal, every wine we produce, we seek to capture the distinct expressions that make Ontario wines unique. I'm very pleased with the result of this vintage and consider it a more than capable ambassador for the quality of the Cabernets produced in the region. It is drinking well now and can be kept with improvement for years to come.
